Dinner


Veggie Burger with Guacamole and Salsa on a Whole Wheat Bun
Baked Yam Fries
Garden Salad

We used Boca Brand Original Vegan burgers, and they were surprisingly tasty. Unlike most other brands, they're not filled with bits of vegetables, but are rather "soy burgers", and surprisingly meat-like in taste and texture. Not exactly beef-like, or any other recognizable meat-like, but good nonetheless.

Leftover Whole Wheat Pasta with Vegan "Meatballs"


Breakfast was the usual, cereal, strawberries, coffee, OJ. I think I'm only going to take breakfast pics if I'm eating something different. There's only so many bowls of cereal anyone can look at.

I am also switching to a smaller pic size. No fancy reason for that either. I just think it looks better.

Today's dinner came with a casualty.

SATURDAY

Notice the day is in caps, because this day rocked...a Mets game, beer, pizza....what could be better? I guess this is a good time to mention that I don't normally eat as well as I have been. I am not a vegetarian, although I try not to eat much meat. I decided to take a couple of weeks to focus on eating as healthy as I can, lots of fresh fruits and veggies, etc. I'm also hoping that taking pictures and posting what I'm eating will help make me more accountable, and motivate me to stay healthy.

Dinner

Baked potato with salsa and fat-free plain yogurt, with black bean, corn and avocado salad. And yes, I baked the potato like all civilized people bake potatoes...5 minutes in the microwave.

All in all, today was a pretty boring day. Hubby went to a ballgame, so I played leftover roulette.

Dinner

Leftover eggplant curry, veggie rice, lentil stew cake and roasted kale.



Lunch

More leftover spaghetti squash, with added tomato sauce. I still have half of this damn squashed baked and ready to go. I don't want it to go to waste, but I'm going to turn orange if I have to keep eating it.



Breakfast


Cereal, strawberries, rice milk. OJ, Coffee

Hubby pointed out that we are eating puffed rice cereal in rice milk. Seems wrong somehow.

Friday Dinner


Eggplant Curry, Garden Salad and Spicy Roasted Chick Peas

This curry was surprisingly simple to put together, and tasted fantastic! This is the "recipe" I used, but since I don’t actually measure anything, this is an approximation of what I did.

Cut the eggplant in half longways, brush with olive oil and garlic, and place in a glass baking dish with a little bit of water. Bake at 450ºF about 40 minutes, or until tender. Let cool, then peel and chop.

Heat a saucepan, and add a little bit of water, then a chopped onion and cumin powder. Add finally chopped garlic and ginger, curry powder, and one can of crushed tomatoes (undrained).

Add eggplant and a chopped jalapeno pepper. Add nonfat Greek yogurt to thicken. Turn down heat, cover and cook for 15 minutes.
