Tuesday
Cavatelli with mixed veggies in red sauce.
Not exactly the prettiest, or the healthiest. I don't know if this has come up, but hubs and I are living with my parents. I do the cooking, but they decide the menu, which, inevitably is pasta, pasta, pasta. Catatelli was their "non-pasta" ideal. I'm in a food funk.

I'm still here....
just being lazy. Here are a couple while I'm getting back on track.
Poached Flounder with Spinach and Quinoa
I was a little leery of the flounder, last time I cooked with it we spent the next day dealing with a fishy smelling house. This time I poached the still frozen fillets in water seasoned with lemon juice and some herbs. No smell at all, and the fish stayed quite moist. Win!
Turkey Bacon, Avacodo, Arugula and Tomato sandwhich on whole wheat bread, with roasted green beans.

Well,
so soon in the game and I've been slacking off. I apologize. Although, I'm not sure who it is I'm apologizing to. My sole reader also happens to be the hubby...and if needs to refer to the flog to figure out what he's eating, I'm in trouble.
So, I'll leave you with just a few highlights from the past few days, while I figure out how to better manage floggy.

For us, this is what Toad in a Hole is, a fried egg cooked in a piece of toast. All I can say is thank god I never ordered it out. To the rest of the world, this is Toad in a Hole

And, finally
Homemade Turkey Meatloaf with Mashed Red Potatoes, and Roasted Carrots and Radishes.
Can I just say, OMG. Where have roasted radishes been my whole life?

Catching up
Wow have I fallen behind! I had a pretty crap-tacular week at work, and just didn't have the motivation to keep this up. Let's see how much I can piece together now.

Chinese Style Tofu and Broccoli with Brown Rice
Today was hot. I mean like 90 degrees, in MAY! So dealing with the heat, and some god-awful sunburn from yesterday's BBQ, today was about using the oven as little as possible.
Lunch
Fruit Smoothie: Banana, Strawberry, Melon, Greek Yogurt, Rice Milk
Breakfast
Fried Egg and Whole Wheat Toast.
Saturday
Dinner
Lobster Ravioli (from Costco....to die for) and side salad
Lunch was from a free barbecue at the VW service event, I didn't want to be the wiener taking pictures.
Breakfast
Fruit Smoothie (Banana, Strawberry, Melon, Greek Yogurt, Choco. Soy Milk)
Friday
Since this was one of the absolutely worst weeks I can remember having, hubby took me out for beer and wings tonight!
Thai Chili Wings: I was so excited that I ate almost all of them before remembering to take the pic.
Grilled Chicken sandwich with roasted peppers and mozzarella
Lunch: I'm sure I ate lunch, but I have no proof of it.

Breakfast wrap with scrambled egg whites, tomato, broccoli and salsa.

Lentil Loaf with Mashed Sweet Potatos and Roasted Brussel Sprouts
Lunch was a hodgepodge of leftovers, but I can't find any pics.
