Poached Flounder with Spinach and Quinoa
I was a little leery of the flounder, last time I cooked with it we spent the next day dealing with a fishy smelling house. This time I poached the still frozen fillets in water seasoned with lemon juice and some herbs. No smell at all, and the fish stayed quite moist. Win!
